Lemon Cookie Madness!

What to do on a REALLY cold weekend?? Make cookies, of course!! (Now where is that New Year's resolution of will power?) These are by Giada, so I am not claiming them for myself...but they are excellent and I have eaten way too many today! Make them and your family will be very happy! They have an unusual ingredient-ricotta cheese!

Lemon Ricotta Cookies with Lemon Glaze---------350 degree oven

2 1/2 cups flour
1 tsp baking powder
1 stick butter
1 tsp salt
2 cups sugar
2 eggs
1 15 oz container ricotta cheese
3 tbs lemon juice
1 lemon, zested

In medium bowl combine flour, baking powder, salt. Set aside.

In large bowl combine butter and sugar--beat until light and fluffy about 3 mins.

Add the eggs, one at a time. Add ricotta cheese, lemon juice, lemon zest. Beat to combine. Stir in dry ingredients by hand.
(My youngest daughter zesting below!)Spoon 2 tbs dough onto parchment lined baking sheet. Bake 15 minutes at 350 degrees.
When cooled make icing: 1 1/2 cups powdered sugar, 3 tbs lemon juice, 1 lemon zested in small bowl. Stir by hand until smooth, dip in cookies...

Try to keep them away from family but do not count on it! I made these this morning and thank goodness there is a picture--because they are GONE! Sorry I couldn't save you one!

Oh yummy yummy yum! But you didn't save one for me...wah! Guess I'll have to make my own and I'll definitely save one for you! Although by the time it gets to your house it will be stale so maybe I'll just eat it in honor of you :).

The lemon cookies look good. I love Giada. I wish I could watch her more than I do though. She has some very nice recipes. I made my hubby one of her Italian chicken recipies once and He loved it.

Hiya Tara sweetie! These biscuits look absolutely delicious and easy enough to make that I could do! lol I never seem to have much luck baking cookies.
