Tuscan Chicken

You know how I love my crock pot! They are probably used more in winter, but I find I use mine more in the summer. I don't want to cook when it's hot and using the crock pot alleviates stove time. Plus, it allows me to do more with the kids. When we return from the beach and everyone is yelling, "WE ARE STARVING, MOM!!"-- there's a meal!


One of our favorites is Tuscan Chicken. You need 6 boneless breasts, cubed and placed in bottom of crock...
Add 1 chopped onion, 2 cloves minced garlic, 2 chopped carrots, 1 chopped stalk celery, 1 jar diced roasted peppers, 1 can drained cannellini beans, salt and pepper to taste.... Now add 1 1/2 cups spaghetti sauce and 1 cup water over all...
Cook on low 4-5 hours and serve on top of pasta. YUMMY!


And I am not over a hot stove in the heat! :0)

Is is ready yet??? Looks good. Your garden pictures make me yearn for color in my garden. My garden blooms in Spring takes a break and will bloom again soon.

Love crock pot recipes! There's nothing like putting ingredients in the crock in the am and coming home in the pm to a wonderful dinner. We need a crock pot cookbook put together by the bloggers. What do u think?
