The Hunt

Hope your Easter was happy! We had a fun morning of egg hunting…

Some hiding spots were obvious…


Some not so…(they passed this one a million times!)
But eventually all were found (at least let’s hope so or our house will be smelling by week’s end!)
On the kids’ baskets I used these cute tags sent to me by Tina of the Garden Goose. Such a lovely gift from a blogging friend! She is so talented! Thanks, Tina.

I’ve learned over the years on holiday mornings I want to be with my family but as soon as they are done egg hunting or opening holiday gifts they head off to the kitchen with: “I’m STARVING”.

To combat this, I make a Hash Brown Bake. The night before I make the “shell”…line thawed hash browns in bottom of a casserole dish, drizzle with butter and bake at 350 degrees for 20-30 minutes.

In bowl, beat 4-5 eggs, milk, diced ham and cheese, salt and pepper.
Take hash brown shell out of oven, put egg mixture in Tupperware and refrigerate both overnite.



The next morning? As soon as those bodies bounce out of bed, I take the hashbrown shell and egg mixture out of the frig, pour eggs into the shell and bake at 350 degrees for 30-40 minutes until set.

Just when everyone’s coming into the kitchen looking for food, out comes the Hash Brown Bake from the oven to shouts of, “Oh, Yeah!”

One pot easy and my kitchen is not a mess on a holiday morning. I use different combinations: mozzarella and salami, cheddar and pepperoni, green peppers and American…the list is endless!

What a great Easter you had! I loved hiding the eggs when my kids were little. We did Easter egg hunts up until a few years ago :-} when they told me they were TOO old to do them anymore. We were talking about that at the dinner table and remembering finding eggs months later :-} Great memories.

Glad you had a wonderful Easter Tara! The hash brown bake looks delicious.

Our Easter breakfasts traditionally are the colored boiled eggs with horseradish (for my Ukrainan side, and scones (for my Irish side) and have a Columba cake from the bakery for my Italian husband with expresso coffee.

Yep -- I hit the gym today --so many calories to work off!
